Hello and Happy Monday! I hope you don’t mind if I get a little off-track from my usual Monday topic but I want to tell you about one of my co-workers, Kelli. If you’ve ever flipped through an issue of Kentucky Monthly and said, “Wow, this issue looks great!” you have Kelli to thank. Every month she designs the entire magazine, cover to cover. She is one of the hardest working ladies I know and when she is finished in the office, she goes home and takes care of two beautiful children, Kayden and Carly.
Kelli’s mom, Sebrenia, was recently diagnosed with malignant melanoma, a type of skin cancer. She is currently in the staging process and the road ahead is going to be long and hard. To make matters worse, Sebrenia’s employer does not provide health care so she is paying for all of her surgeries, tests and treatments out of pocket. As you can imagine, this is taking a toll on the entire family. This week the family will be hosting a bake sale to raise money for Sebrenia’s treatments, the kick-off to several fundraising events that will be held in her honor.
In hopes that you may venture over to the Pay-Pal account that the family has set up and donate a few dollars to the cause, I’m going to share this adorable melting snowman truffle that I made for their bake sale. I got the recipe for these delicious truffles, which are made using a regular, store-bought cake mix, from Bakerella. I had originally planned on sprinkling the truffles with bits of broken peppermint (which is why I used red velvet cake.) But the dipped cake balls reminded me of snowmen so I broke out a bag of mini-chocolate chips, some Halloween-orange sprinkles for the noses and I went to town. I just hope I don’t scar small children when they bite into a snowman to find red cake! It kind of reminds me of the armadillo cake in Steel Magnolias!
Feel free to use this idea this holiday season; I just ask that you would either make a small donation to the family or send up a prayer for healing for Sebrenia.
“Melting Snowmen” Truffles
1 box cake mix (any flavor)
3/4 can store-bought icing (vanilla tastes great but any flavor will do)
1 package white melting chocolate
Mini-chocolate chips
Small dot sprinkles
Orange “jimmies” or candy corn
Make the cake according to the directions on the package. Allow the cake to cool then crumble up into a large bowl. Mix in 3/4 can of store-bought icing to create a dough-like mixture. Chill the mixture for 30 minutes to an hour before rolling it into small, 1 inch balls. Dip the cake balls into melted white chocolate and decorate like a snowman. For a “melting snowman” appearance, allow excess chocolate to pool at the bottom of the truffle.
Thank you for taking time to visit! I know it’s hard to remember during the hustle and bustle but this season is all about love. We love each other because He loved us! Have a blessed week 🙂
